1 package (12- to 16-ounce) sliced bacon, cut in half
8 Fuyu Persimmons, cored and sliced into 6 wedges each
1/4 cup champagne or white wine vinegar, for brushing

Preheat oven to 400 degrees. Wrap a piece of bacon around each persimmon wedge; secure with a toothpick, and arrange on parchment-lined baking sheets. Roast for 20 minutes.
Flip wedges, rotate pans, and increase heat to 425 degrees; roast until bacon is crisp, about 20 minutes. Brush with vinegar, then season with salt and pepper. Serve immediately.
