Ingredients

  • 1 bottle (750 ml) tequila blanco

  • 5 to 6 roasted* Hatch green chiles, halved lengthwise (seeding and/or peeling optional)

Mild Hatch Chile Peppers

Cooking Steps

  1. 1

In large glass jar or pitcher, add Hatch chile halves. Pour tequila over chiles and stir. Cover and store in cool, dark place (like your pantry) 3-4 days. The tequila will take on color of chiles. Strain and discard chiles**, pour liquid into clean bottles, and store in refrigerator up to 6 months.

  2. 2

Enjoy responsibly as sipping tequila or use to make Hatch Chile Margaritas.

  3. 3

    * Here's how to roast Hatch chiles at home.

  4. 4

** You can save the marinaded chiles for other use, but they tend to lose their flavor and turn a bit leathery. Seeds and pieces of charred chiles give the tequila character, however, if you prefer tequila with no residue, place coffee filter (or cheese cloth) on strainer first, and change filter often.
