Because they are different from other potatoes, we recommend baking Stokes Purple® sweet potatoes in the following ways:
In an Oven - Preheat oven to 350 degrees. Wrap Stokes Purple® sweet potatoes in aluminum foil and place on baking tray. Bake 1 1/2-2 hours. Keep them wrapped and let cool 1-2 hours, or put them in a zip-top bag and refrigerate overnight. (Preferred Method)
In a Slow Cooker - Wrap 3-5 Stokes Purple® sweet potatoes in aluminum foil. Add potatoes to your slow cooker, and cook on low 8 hours. Remove cooked potatoes from slow cooker. Keep them wrapped and let cool 1-2 hours, or put them in a zip-top bag and refrigerate overnight.
In a Microwave - Rinse and wrap Stokes Purple® sweet potato in wet paper towel. Cook in 1 inch of water for 6-8 minutes or until soft. Note that for low wattage microwaves and cooking multiple potatoes, time may vary.
