1 ripe mango, peeled and diced
1 Frieda’s Snow Dragons® Fruit, peeled and diced
1 red bell pepper, diced
1 Frieda’s shallot, finely chopped
1 jalapeño, seeded and finely chopped (optional, for some heat
1/4 cup fresh cilantro, chopped
Juice of 1 lime
Salt to taste
Pepper to taste
Dice the mango and dragon fruit into small, bite-sized pieces. Dice the red bell pepper and finely chop the red onion and jalapeño if you're using it
In a medium-sized bowl, combine the mango, dragon fruit, red bell pepper, red onion, jalapeño, and cilantro.
Squeeze the juice of one lime over the mixture.
Add a pinch of salt and pepper to taste. Mix everything gently until all the ingredients are well combined.
Let the salsa sit in the refrigerator for at least 30 minutes to allow the flavors to meld together.
Enjoy your Mango Dragon Fruit Salsa with chips, crackers, as a topping for grilled fish or chicken, or just by itself as a refreshing snack.
