12 large Joolies dates, pitted
1/2 cup walnut pieces
1/4 cup coconut flour
1/4 cup sunflower seeds
2 tablespoons chia seeds
2 tablespoons flax seeds
2 tablespoons hemp seeds
1/2 teaspoon cinnamon
1/2 teaspoon ground cloves
1 teaspoon vanilla extract
1/3 cup creamy cashew butter
1/2 cup cooked, mashed, chilled Frieda’s Stokes Purple® sweet potatoes*
1/4 cup shredded, unsweetened coconut

Soak pitted dates in hot water for 10 minutes.
In food processor, finely grind together walnuts and coconut flour, along with sunflower, chia, flax, and hemp seeds. Consistency should be mildly sticky. Add remaining ingredients, except coconut, and process a few more minutes until all ingredients are smooth and form a wet, sticky dough.
Remove dough from food processor and place in fridge to chill for 20 to 30 minutes. Shape into small balls (about 1 tablespoon each). Roll each ball into shredded coconut. Place in airtight storage container and chill until serving.
*Peel and cube purple sweet potatoes and boil until fork tender, or use perfectly baked Stokes Purple sweet potatoes.
